


The best vines on the slopes of the Montagne d’Alaric are used to make this wine. Here, at Camplong in the district of Lagrasse, the soil is a red chalky clay mixed with pebbles. The vines are 20 years old on average.
Harvested entirely by hand.
Carbonic maceration is used for the Syrah and Carignan, keeping the grapes intact. Fermentation takes 10-12 days. The Grenache is destalked. In March the fermented grape-juices are blended to create the desired wine. Any remaining particles are precipitated, and the resulting liquid is then filtered. The bottling starts at the end of April.
An uncompromising selection of the best grapes and rigorous quality
controls produce a densely coloured Peyres Nobles with a powerful, complex
bouquet redolent of red fruits and spices.
Full-bodied, rounded and smooth, this wine brings out the best in barbecues and
young cheeses.
May be served slightly chilled.
Peyres Nobles will improve with keeping for 3-4 years.
In order to preserve the concentrated aromas, this wine has been only lightly filtered so that you may find a small deposit in the bottle, which does not affect the quality of the product.
