

The vines on the southern slopes of Alaric are used to make this wine. Here, at Camplong in the district of Lagrasse, the soil is a red chalky clay mixed with pebbles.
Entirely harvested by hand.
The grapes are crushed in a pneumatic press and the juice fermented at a low temperature for 15 to 20 days. At this point the juice is decanted, any remaining particles are precipitated, and the resulting liquid is then filtered. Bottling starts in January.
This crystal-clear wine has a floral nose with hints of green apples. It is fresh-tasting, well balanced, and has a good long finish.
White Peyres Nobles is the ideal accompaniment for sea food and for fish, either grilled or in a sauce.

The vines, which are pruned en gobelet forming compact bushes, produce 40 hectolitres/hectare. Their average age is 25 years.
